USDA Marbling Scores on Carcass Grades
When logging carcass data in Breedr, marbling score is entered as a numeric value between 0 and 999. Each score corresponds to a degree of marbling and a USDA quality grade.
| Degree of Marbling | Abbreviation | Minimum Score | Quality Grade |
|---|---|---|---|
| Devoid | D | 0 | -- |
| Practically Devoid | PD | 100 | Standard |
| Traces | TR | 200 | Standard |
| Slight | SL | 300 | Select |
| Small | SM | 400 | Low Choice |
| Modest | MT | 500 | Average Choice |
| Moderate | MD | 600 | High Choice |
| Slightly Abundant | SLAB | 700 | Low Prime |
| Moderately Abundant | MAB | 800 | Prime |
| Abundant | AB | 900 | Prime |
How to read the score: A marbling score of 500 means "Modest 00" -- the lowest end of the Modest degree. A score of 550 falls in the middle of the Modest range. Each degree covers 100 points, so 400 to 499 is Small (Low Choice), 500 to 599 is Modest (Average Choice), and so on.
